Ingredients
- 3 cups of almond flour
- ½ cup xylitol
- ½ tsp pink salt
- 1 stick of melted butter
- 6-7 apples, peeled and sliced
- 2 tsp cinnamon
- 1 stick of butter
- 3 tbsp almond flour
- ¼ cup water
- 1 cup xylitol
- 1 egg + 1 tbsp water for egg wash
Directions
- Pie Crust:
3 cups of almond flour, ½ cup xylitol, ½ tsp pink salt, 1 stick of melted butter
Mix all together in a large bowl. Press HALF of the dough into a pie pan. If using glass or ceramic, no need to grease. If using a metal pan, spray with coconut oil. Let chill in fridge.
- Apple Pie Filling:
6-7 apples, peeled and sliced,2 tsp cinnamon, 1 stick of butter, 3 tbsp almond flour, ¼ cup water, 1 cup xylitol, 1 egg + 1 tbsp water for egg wash
- Preheat oven to 425. Melt butter on medium heat. Whisk in 3 tbsp of almond flour. Simmer 1 minute, whisking continuously. Add ¼ cup water, 1 cup xylitol and bring to a boil. Reduce heat and simmer for 3 min. Stir frequently. Remove from heat.
- Peel apples, remove cores, slice and place in a large bowl. Add a bit of lemon juice to prevent apples from turning brown. Sprinkle cinnamon on top of apples. Toss to combine. Add sauce and stir to coat all the apples.
- Add apple pie filling to pie pan. Sprinkle with other half of pie crust mixture. Press down with hands. Beat together 1 egg and 1 tbsp water and brush the top with egg mixture.
- Bake at 425 for 15 min. Reduce heat to 350 and bake another 30-45 min depending on oven. *Place on top of a baking sheet to prevent a mess in your oven. * Rest at room temp for 1 hour before serving.
